USE OF MIX «BIO MIX» FOR IMPROVEMENT OF QUALITY AND FOOD VALUE OF BREAD.
The paper proves grain mixture «Bio mix» use expediency while baking bread from wheat flour an optimal dose of this mixture and its influence on ready-made products proteins quality and amino acid composition is identified.
